Soon after Ken experienced many positive side effects from converting his own diet to gluten-free, he had a strong desire to serve the guests of his New Hampshire Inn with gluten-free breakfasts and afternoon snacks - but in a way that would ensure even guests with no dietary restrictions would still love the food. In mid 2012, Ken and his wife Chris converted Riverside Inn of Mt. Washington Valley to one of the nation's first and only totally gluten-free and celiac safe bed and breakfast inns, with an emphasis on great tasting food made with the finest ingredients. Ken was already well-versed in using ingredients local to his North Conway location - organic when available - and often from the Inn's garden. He cooks from scratch, always keeping healthy nutrition in mind. Converting the Inn's kitchen to gluten-free was a major undertaking, but he persevered. Recipes came next; Ken tested, tasted, and selected his gluten-free ingredients and recipes carefully, experimenting, fine tuning, and determined to uphold his reputation for fantastically delicious breakfasts. Today Ken happily reports that his guests love his gourmet gluten free breakfasts, even without knowing how healthful they are.
